Grilled Pizza With Butter, Cinnamon, Sugar & Star Anise With Chocolate Sauce

Ingredients:
1/2 recipe Pizza Dough, rolled into 1 (10-inch) rounds
3 T canola oil
1/4 cup granulated sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground star anise
1/2 stick unsalted butter, at room temperature
good quality chocolate sauce, like Fran's, heated

* * * * * * * * * * * *

Ingredients for pizza dough:
2/3 cup lukewarm water (105 degrees F to 115 degrees F)
2 1/2 teaspoons active dry yeast
1/2 teaspoon sugar
2 T olive oil, plus additional for oiling bowl
1 3/4 to 2 cups all purpose unbleached flour
1/4 cup finely ground yellow cornmeal
2 teaspoons coarse salt

Preparing the dough:
In a large bowl stir together 1/3 cup water, yeast, and sugar and let stand until foamy, about 10 minutes. Stir in remaining 1/3 cup water, 2 tablespoons oil, 1 3/4 cups flour, cornmeal, and salt and blend until the mixture forms a dough. Knead dough on a floured surface, incorporating as much of remaining 1/4 cup flour, as necessary, to prevent dough from sticking, until smooth about 5 to 10 minutes. Form the dough into a ball.

Lightly oil the sides and bottom of a large bowl with oil, add the dough, turn to coat in the oil, cover and let rise in a warm place until doubled in size, about 1 hour. Gently punch the dough down and divide into 4 equal pieces. Roll each piece on a lightly floured surface into a 10-inch circle that is 1/8-inch thick. Brush off excess flour and transfer the dough to a baking sheet, cover each circle of dough with plastic wrap and continue stacking rolled out pieces on top of each other. Wrap well with plastic wrap and refrigerate until ready to grill.

* * * * * * * * * * * * *

Preparing the pizza:
Heat the grill to high.

Brush both sides of each pizza with the oil. Grill until golden brown on both sides, about 2 minutes per side. Remove from the grill.

* * * * * * * * * * * * *

Preparing the topping:
Mix together the sugar, cinnamon and star anise in a small bowl.

* * * * * * * * * * * * *

Assembling the pizza:
Brush the tops of each pizza with the butter and sprinkle with the sugar mixture. Place back on the grill, close the cover and cook an additional 1 minute. Cut into quarters and drizzle with the warm chocolate sauce.

Apricot & Taleggio Crostata

Ingredients for crust:
1 1/2 cups all purpose flour
1/2 teaspoon fine sea salt
1 T sugar
3 T cold, unsalted butter, cut into small pieces
1/2 cup cold mascarpone cheese
1 1/2 T fresh lemon juice
3 T ice water

Ingredients for filling:
2 cups (12 ounces) dried apricots
1/3 cup chopped walnuts
2 teaspoons lemon zest
1 teaspoon ground cinnamon
3/4 teaspoon fine sea salt
1/4 cup honey
7 ounces Taleggio cheese, rind removed, cut into 1/2-inch cubes
1 egg, beaten

Preparing the crust:
Add the flour, salt, and sugar to a food processor and pulse to combine. Add the butter and pulse until the butter is finely chopped and the mixture resembles coarse meal. Add the mascarpone cheese and lemon juice and pulse a few times. Add the ice water and run the machine just until the mixture is moist and crumbly, but does not form a ball. Do not overmix. Turn the dough out onto a sheet of plastic wrap. Press into a disk, cover, and refrigerate for 30 minutes.

Preparing the filling:
Put an oven rack in the lower third of the oven. Preheat the oven to 375 degrees F. In a medium bowl, combine the apricots, walnuts, lemon zest, cinnamon, and sea salt. Add the honey and stir until all the ingredients are coated. Stir in 2/3 of the cheese.

Cut a piece of parchment paper to fit inside a 12 by 17-inch baking sheet and put it on a work surface. Put the chilled dough on the parchment paper. Roll the dough into an 11-inch circle, about 1/4-inch thick. Lift the parchment paper and transfer it to a baking sheet. Put the apricot filling in the center of the dough, spreading evenly, leaving a 2-inch border. Fold the dough border over the filling to form an 8-inch round. Pleat the edge of the pastry and pinch to seal any cracks in the dough. Arrange the remaining cheese on top of the filling.

Using a pastry brush, brush the crust with the beaten egg. Bake until the crust starts to turn golden, about 15 to 18 minutes. Cover the crostata loosely with a piece of foil and cook until the crust is golden and the cheese has melted, another 12 to 15 minutes. Remove the crostata from the oven to a cutting board and uncover. Cool for 10 minutes, then cut into slices and arrange on a serving platter. Serve while still warm.

2 pounds Yukon gold potatoes, peeled and cut into 3/4-inch chunks
4 cups chopped leeks, white and light green parts, cleaned of all sand (4 leeks)
1/4 cup good olive oil
kosher salt and freshly ground black pepper
3 cups baby arugula, lightly packed
1/2 cup dry white wine, plus extra for serving
6 to 7 cups chicken stock, preferably homemade
3/4 cup heavy cream
8 ounces creme fraiche
1/4 cup freshly grated Parmesan, plus extra for garnish

crispy shallots

* * * * * * * * * * * * *
Ingredients for crispy shallots:
1 1/2 cups olive oil or vegetable oil
3 T unsalted butter
5 to 6 shallots, peeled and sliced into thin rings

Preparing the soup:
Preheat the oven to 400 degrees F.

Combine the potatoes and leeks on a sheet pan in a single layer. Add the olive oil, 1 teaspoon salt, and 1/2 teaspoon pepper and toss to coat the vegetables evenly. Roast for 40 to 45 minutes, turning them with a spatula a few times during cooking, until very tender. Add the arugula and toss to combine. Roast for 4 to 5 more minutes, until the arugula is wilted. Remove the pan from the oven and place over 2 burners. Stir in the wine and 1 cup of the chicken stock and cook over low heat, scraping up any crispy roasted bits sticking to the pan.

In batches, transfer the roasted vegetables to a food processor fitted with the steel blade, adding the pan liquid and about 5 cups of the chicken stock to make a puree. Pour the puree into a large pot or Dutch oven. Continue to puree the vegetables in batches until they're all done and combined in the large pot. Add enough of the remaining 1 to 2 cups of stock to make a thick soup. Add the cream, creme fraiche, 2 teaspoons salt, and 1 teaspoon pepper and check the seasonings.

When ready to serve, reheat the soup gently and whisk in 2 tablespoons white wine and 1/4 cup of Parmesan. Serve hot with an extra grating of Parmesan and crispy shallots, if using.

Serves 6 to 8

* * * * * * * * * *

Preparing the crispy shallots:
Heat the oil and butter in a saucepan over medium-low heat until it reaches 220 degrees F on a candy thermometer.

Reduce the heat to low, add the shallots, and cook for 30 to 40 minutes, until they are a rich golden brown. The temperature should stay below 260 degrees F. Stir the shallots occasionally to make sure they brown evenly. Remove them from the oil with a slotted spoon, drain well, and spread out to cool on paper towels. Once they have dried and crisped, they can be stored at room temperature, covered, for several days.

2 28-ounce cans of whole tomatoes packed in juice, drained, 3 cups of juice reserved, tomatoes seeded
1 1/2 T dark brown sugar
4 T (1/2 stick) unsalted butter
4 large shallots, minced (about 2/3 cup)
1 T tomato paste
pinch of ground allspice
2 T unbleached all purpose flour
1 3/4 cups low-sodium chicken broth
1/2 cup heavy cream
2 T brand or dry sherry
salt and pepper to taste
cayenne pepper

Preparing the soup:
Adjust the oven rack to upper-middle position and heat oven to 450 degrees F; line rimmed baking sheet with aluminum foil. Heat butter over medium heat in medium nonreactive saucepan until foaming, add shallots, tomato paste, and allspice. Whisking constantly, gradually add broth; stir in reserved tomato juice and roasted tomatoes. Cover, increase heat to medium and bring to boil; reduce heat to low and simmer, stirring occasionally, to blend flavors, about 10 minutes.

Strain mixture into medium bowl; rinse out saucepan. Transfer tomatoes and solids in strainer to blender; add 1 cup strained liquid and puree until smooth. Place pureed mixture and remaining strained liquid in saucepan, add cream, and heat over low heat until hot, about 3 minutes. Off heat, stir in brandy or sherry; season to taste with salt and cayenne and serve immediately.
