Hazelnut Cinnamon Rolls

Ingredients:
3 T butter, melted
1/3 cup hazelnuts, toasted and coarsely chopped
1/4 cup packed dark brown sugar
2 T sugar
1 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1 (1 lb.) loaf purchased frozen white bread dough, thawed (recommended: Bridgeford)
3/4 cup powdered sugar
3 T mascarpone cheese
1 T buttermilk

Preparing the rolls:
Brush 1 tablespoon of melted butter over the bottom and sides of an 8 by 8 by 2-inch baking dish. Mix the nuts, brown sugar, sugar, cinnamon, and cloves in a small bowl. Roll out the thawed dough on a lightly floured surface to a 12 by 9-inch rectangle. Brush 1 tablespoon of butter over the dough. Sprinkle the nut mixture over the dough, leaving a 1/2-inch border along the top and bottom sides. Starting at 1 long side, roll up the dough jelly-roll style, forming a log. Pinch the seam to seal. Cut the log into 9 equal pieces. Arrange the rolls, cut side down, in the prepared baking dish, spacing evenly. Cover the dish with plastic wrap. Let the rolls rise in a warm draft-free area until puffed, about 45 minutes.

Position the rack in the center of the oven and preheat to 325 degrees F.

Bake the cinnamon rolls uncovered until the tops are golden brown, about 25 minutes.

Lamb & Black Bean Chili

I serve a simple salad of mixed greens or butter lettuce, a full-bodied zinfandel or cabernet sauvignon and Indian fry bread or corn bread alongside this spicy and hearty dish. A light fruit dessert completes the meal.

Cut down on the chilis for milder palates.

In place of the cremas, squeeze fresh lime into the chili to round out the flavors.

Ingredients for lamb chili:
1/4 cup olive oil
2 1/2 pounds lamb from shoulder, boned and cut into 1/2-inch cubes
salt and freshly ground black pepper
1 1/2 large Spanish onions, finely diced
6 cloves garlic, finely chopped
1 (15-ounce) can whole tomatoes, drained and pureed
1 T chipotle puree [one chipotle chile in adobo sauce from a small can, finely minced, makes about a tablespoon]
3 T ancho chili powder
1 T pasilla chili powder
1 T ground cumin
2 teaspoons ground coriander
1 T dried Mexican oregano
5 cups chicken stock [cut this down to 2 1/2 cups if you don't have hours to spend cooking it down, or add masa harina to thicken]
1 (12-ounce) bottle dark beer
dash of ground cinnamon
1 to 2 T honey
2 cups cooked or canned black beans
chopped cilantro leaves, for garnish

* * * * * * * * * * * * *

Heat the oil in a medium saucepan over high heat. Add the lamb, in batches, season with salt and pepper, and cook until seared and browned on all sides. Remove the lamb to a plate with a slotted spoon.

Add the onion to the pan and cook until soft. Add the garlic and cook for 1 minute. Add the tomatoes, chipotle, and spices. Return the lamb to the pan, add the stock and beer; cover and cook at a simmer for over medium heat, about 1 hour, or until the lamb is tender and the mixture has thickened. After 30 minutes, check seasoning and add honey. During the last 15 minutes, add the cinnamon and cooked beans. Season with salt and pepper, to taste. Sprinkle with chopped cilantro. Ladle into bowls and top with a large dollop of cumin crema, avocado relish, and red onion relish.

Serve with fry bread.

Pea Pesto Crostini

Ingredients:

Pesto:
1 (10-ounce) package frozen peas, defrosted
1 garlic clove
1/2 cup grated Parmesan
1 teaspoon kosher salt, plus extra for seasoning
1/4 teaspoon freshly ground black pepper, plus extra for seasoning
1/3 cup olive oil

Crostini:
8 (1/2-inch thick) slices whole-grain baguette or ciabatta bread, preferably day-old, [see *note below]
1/3 cup olive oil
8 cherry tomatoes, halved or 1 small tomato, diced

Preparing the pea pesto:
Pulse together the peas, garlic, parmesan, 1 teaspoon of salt and 1/4 teaspoon of pepper in a food processor. With the machine running, slowly add the olive oil until well combined, about 1 to 2 minutes. Season with additional salt and pepper, if needed. Transfer to a small bowl and set aside.

Preparing the crostini: Preheat a stove top griddle or grill pan on medium-high heat. Brush both sides of the sliced bread with olive oil and grill until golden, about 1 to 2 minutes. Transfer the bread to a clean surface and spread 1 to 2 tablespoons of the prepared pesto on each slice. Top with tomato halves.

Serves 4 to 6

Note: If you don't have day-old bread on hand, you can dry out fresh bread by putting the slices in a preheated 300 degree F oven until slightly crisp, about 5 minutes.

Taleggio & Pear Panini

1 (1-pound) loaf ciabatta bread (or 8 slices country bread)
1/4 cup olive oil
8 ounces Taleggio cheese or brie, sliced
2 large pears, apples or peaches, cored and cut into 1/4-inch wedges
2 T honey
pinch salt
pinch freshly ground black pepper
3 ounces arugula or spinach

Preparing the panini:
Cut the ciabatta loaf into 4 equal pieces. Halve each piece horizontally to make 4 sandwiches. Brush the bread on both sides with olive oil and place the bottom half of the bread slices in the panini machine or in a grill pan in a single layer. Heat until golden, about 3 to 4 minutes. Continue with the remaining top slices of bread.

While the top slices of the bread are in the panini machine/grill, begin forming the sandwiches. Divide the cheese among the warm bread. Cover the cheese with slices of fruit. Drizzle the fruit with honey. Sprinkle with salt and pepper. Top with a handful of arugula. Place the warmed top half of the bread over the arugula and return the competed sandwich to the panini machine for 1 to 2 minutes more to finish melting the cheese. Remove from the panini machine. Cut the sandwiches in half and serve immediately.

4 very thin slices prosciutto
12 (1/4-inch thick) slices rustic country bread
1/2 cup extra virgin olive oil, plus extra for drizzling
1 (12-ounce) package frozen artichoke hearts, thawed
1 (15-ounce) can cannellini beans, rinsed and drained
1 cup grated pecorino romano
1/2 cup coarsely chopped fresh basil leaves
1 teaspoon lemon zest
3 teaspoons fresh lemon juice
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper

Preparing the crostini:
Put an oven rack in the center of the oven. Preheat the oven to 375 degrees F. Spray a baking sheet with vegetable cooking spray

Ham, Cheddar & Asparagus Quiche

Ingredients:
1 cup thinly sliced fresh asparagus
4 ounces grated cheddar cheese
4 ounces finely chopped smoked deli ham
6 large eggs
2 cups milk
1 cup heavy cream
black pepper to taste

pie shell or 1 1/2 cups unseasoned dried breadcrumbs

Preparing the quiche:
Preheat the oven to 350 degrees. Butter a 9-inch by 13-inch baking dish.

Combine 6 large eggs with 2 cups of milk and 1 cup of heavy cream and a good crack of black pepper in a mixing bowl and whisk to combine.

Sprinkle 3/4 cup unseasoned, dried breadcrumbs into the buttered baking dish, add the 1 cup of sliced asparagus to that and sprinkle another 3/4 cup dried breadcrumbs over the top of that.

Carefully add the custard mixture trying not to disturb the bottom too much, sprinkle the ham and cheese over the top of that. Bake for approximately 40-45 minutes (the quiche will puff up quite a bit and should feel somewhat firm to the touch when it is done, but it will shrink back down a bit as it cools).

Note: The reason for the 2 separate layers of breadcrumbs is so that the breadcrumbs can absorb some of the water in the asparagus as the quiche bakes.

Go slow adding the custard so that the breadcrumbs remain on the bottom, although some will float up to the top.

2/3 cup lukewarm water (105 degrees F to 115 degrees F)
2 1/2 teaspoons active dry yeast
1/2 teaspoon sugar
2 T olive oil, plus additional for oiling bowl
1 3/4 to 2 cups all purpose unbleached flour
1/4 cup finely ground yellow cornmeal
2 teaspoons coarse salt

Ingredients for pizza:
1/2 recipe pizza dough rolled into 2 (10-inch) rounds
canola oil
salt and freshly ground black pepper

* * * * * * * * * * * * * * *

1 cup grated Monterey Jack cheese
1/2 cup crumbled blue cheese, like Cabrales

1 bunch watercress, coarsely chopped

shaved parmigiano-reggiano

Preparing the dough:
In a large bowl stir together 1/3 cup water, yeast, and sugar and let stand until foamy, about 10 minutes. Stir in remaining 1/3 cup water, 2 tablespoons oil, 1 3/4 cups flour, cornmeal, and salt and blend until the mixture forms a dough. Knead dough on a floured surface, incorporating as much of remaining 1/4 cup flour, as necessary, to prevent dough from sticking, until smooth about 5 to 10 minutes. Form the dough into a ball.

Lightly oil the sides and bottom of a large bowl with oil, add the dough, turn to coat in the oil, cover and let rise in a warm place until doubled in size, about 1 hour. Gently punch the dough down and divide into 4 equal pieces. Roll each piece on a lightly floured surface into a 10-inch circle that is 1/8-inch thick. Brush off excess flour and transfer the dough to a baking sheet, cover each circle of dough with plastic wrap and continue stacking rolled out pieces on top of each other. Wrap well with plastic wrap and refrigerate until ready to grill.

* * * * * * * * * * * *

Preparing the glaze:
Bring vinegar to a boil in a small nonreactive saucepan and cook, stirring occasionally, until reduced to 1/2 cup. Stir in the honey and season with salt and pepper, to taste.

* * * * * * * * * * *

Preparing the steak:
Heat grill to high. Brush steak on both sides with oil and season with salt and pepper. Grill until golden brown and slightly charred on both sides and cooked to medium-rare doneness, about 5 minutes per side. Remove from the grill to a cutting board, tent lightly with foil and let rest for 10 minutes. Slice into 1/4-inch thick slices.

* * * * * * * * * * *

Preparing the pizza:

Heat the grill to high.

Brush both sides of the pizzas with oil and season with salt and pepper. Grill until golden brown on both sides, about 2 minutes per side. Remove from the grill, divide the Monterey Jack cheese over the top of each one and then sprinkle with the blue cheese. Place back on the grill, close the cover of the grill and grill until the cheese has melted, about 1 minute. Remove to a flat surface, divide the steak between each pizza, then top with the watercress. Drizzle with some of the balsamic glaze and sprinkle with some of the shaved Parmigiano-Reggiano.
