Carribbean Sweet Potato Pudding

Ingredients:
4 sweet potatoes, about 1 1/4 pounds, cooked, peeled, and sieved
6 large eggs
2 pinches of salt
2 T unbleached all-purpose flour
1/2 cup molasses
2 ripe bananas, riced
1/2 cups dark rum or bourbon
1 T grated fresh ginger
allspice, cinnamon, cloves, to taste

Preheat the oven to 350 degrees F.

Mix all of the ingredients together and bake for about 45 minutes, until the pudding is set.
