Duk Sauce
Ingredients for duk sauce:
5 cups peeled and coarsely chopped mixed fruit (apples, plums, and pears)
1 cup water
3/4 cup apple juice
1 teaspoon soy sauce
1 T apricot preserves
1/2 cup packed light brown sugar
1/2 teaspoon garlic
1/2 teaspoon dry mustard
Preparing the duk sauce:
Over medium heat in a large pot, place fruits, water, apple juice, soy sauce, apricot preserves, brown sugar, garlic, and dry mustard. Stir frequently while it simmers. With reduced heat allow the mixture to simmer for 40 minutes and then remove the sauce from the heat and allow it to cool. Once sufficiently cooled, blend the mixture in a food processor or blender until it is completely smooth. Cover or can the sauce and refrigerate.
