Roasted Fennel

Ingredients:
3 T olive oil
2 fennel bulbs, quartered
salt and pepper

Preparing the fennel:
Preheat the oven to 400 degrees F.

Heat the oil in a skillet over medium-high heat. Add the fennel and season with salt and pepper. Cook, turning to sear all sides, until caramelized, about 5 minutes. Transfer the skillet to the oven and roast for 30 minutes.

Serves 4
